For my first post, I thought I'd keep it simple. Roasted broccoli is a joy. It's the one tip I give to my friends when they are on a health kick. Roast your veg!! This is a recipe that was on heavy rotation at Wee Guy's Cafe, my old employment stomping ground. And people think we Glaswegians don't do veg.
Roast Purple Sprouting Broccoli with Sweet Tahini & Lemon
500g of purple sprouting broccoli
1 tablespoon of black or white sesame seeds
2 tablespoons of tahini (I'm using dark for an extra nutty flavour)
1 tablespoon of soy sauce
2 tablespoons olive oil
The juice from half a lemon
2 teaspoons honey or maple syrup
1 clove of garlic (or a little less if you are planning on talking to anyone for the rest of the day!)
Salt and pepper
Preheat oven to 200˚. Scatter the broccoli onto a baking tray and drizzle with olive oil and sprinkle with salt and pepper. Roast for 10-12 minutes, until broccoli is tender and lightly charred.
In a bowl, add the ingredients for the dressing. Whisk to emulsify and pour 1 to 2 tablespoons over the broccoli. Do this whilst it's still warm, it'll soak up the flavour better. Sprinkle with sesame seeds and serve.
